Pumpkin Brownies

Pumpkin Brownies are easy, fudge-y brownies made using only a box mix and a can of pumpkin.

These are so awesome. Mostly because they only require two ingredients…but I make it three, just for a little more flavor.

And, not to burst any bubbles (except that’s exactly what I’m about to do), but these are not healthy.

I realize a lot of bloggers will make these and tell you they are. You may be more inclined to listen to them because, hey, “healthy dessert” is exactly what I like to hear. I did not to anything different than what those bloggers did. The fact is that they’re full of it.

For some reason, people have this impression that adding a fruit or vegetable to something normally unhealthy makes it healthy. Adding pumpkin does make this lower in fat, but fat (depending on the source–avocado fat is better for you than dairy fat, for instance) is better for you than sugar. And these, like all brownies, are loaded with sugar.

So, no, these are not good for you. But they are delicious and so incredibly easy.

They have a sort of odd texture, since it’s made with pumpkin instead of oil, water, and eggs. But it has a nice, subtle pumpkin taste. If you like massively fudge-y brownies, these are for you!

Oh. And it’s easy. Who doesn’t love easy?

What sorts of substitutes do you like to use in box mixes?
