Healthy Avocado Spread

This healthy avocado spread adds moisture and extra flavor to any sandwich. It can be used in place of mayonnaise or just as a vegetable dip.

The last few years, my method for getting through winter has been to think up spring- and summer-y recipes. Atlanta has been in the 60’s for the last 2 weeks, though, and that’s not expected to change soon. So dreaming of spring hasn’t been necessary.

Still! Something about warm weather always makes me want lighter, more vegetable-centric meals. But it also makes me want sandwiches (because who wants to cook when it’s hot outside?). The problem is that I love adding sandwich spreads, it gives the sandwich a moist texture that’s easier to swallow. But most aren’t too great for you. So I came up with my own recipe using avocado as the base.

I was inspired to make this by…well, mayonnaise One day while slicing up an avocado, I realized just how soft it was. Like margarine…obviously solid, but easy to spread. And then I realized the texture of pureed avocado would probably be similar to mayonnaise. So I popped it into a food processor and voila! Avocado spread was born.

Healthy Avocado Spread

  • 1 ripe avocado
  • 1 tbsp lemon juice
  • 1 tsp coconut oil
  • 1/4 tsp garlic powder
  • 1 tsp cilantro
  • salt, to taste

Step 01: Open and slice your avocados. Add all of the ingredients to a food processor. Pulse until completely blended and smooth.

That’s it! How simple is that!? You can use it as a sandwich spread or as a vegetable dip!

To be honest, I looked up a ton of recipes for this and couldn’t find any that sounded interesting. Almost all of them called for mayonnaise and then some of the people who wrote those recipes even had the audacity to call that healthy. I’m sure it’s delicious with the mayonnaise and you’re more than welcome to add some. But if you want a healthy spread, stick to this recipe. 🙂

And if you’ve been here before, you may notice I changed the recipe. I wound up dialing it back for myself because I didn’t use it fast enough. This should only keep in the fridge for about a week.

    That makes two of us! Summer has actually always been my favorite season – but I also grew up in Norway where our summers where never as hot as they are here in Georgia. Now I’m definitely more of a spring and early fall person, but I still like the heat.

    I’m almost a little worried about how hot it’s going to be when me and Andy go on our cross-country road trip this July. Hopefully CA won’t be too bad, though.

      How did you handle going from Norway to Georgia (weather-wise)? Zach and I are moving there at the end of this week and I’m a little worried about how we’ll acclimate to the heat.
