Now…I forgot to make a post for today, which I will justify by saying I’ve been traveling.
Instead of trying to hurry up a post about my own weekend adventures, I’m going to plug three recipes (it was going to be five, but I can’t seem to access my Pinterest account at the moment…sorry) that I found on other blogs and love. So much so that they have become regulars in the meal circulation.
1. Italian Chicken from Our Story. This stuff is amazing. It’s sweet and savory. To cut carbs, I don’t put it on pasta, but it’s still sooo good. Though, I will admit, I found a box of Parmesan Garlic Rice-A-Roni in my cupboard and put it on that…and wow. Something about the different flavors really resonated. It helps if you like artichokes and tomatoes, though. Zach likes the flavor it gives the chicken, but he usually dumps the actual chunks onto my plate. Not that I’m complaining. 🙂
2. Paleo Mini Banana Pumpkin Muffins from Inspire & Indulge. These are fantastic (even if you’re not on a Paleo diet), especially if you’re watching what you eat. They’re incredibly nutritious, since they have no flour. I think the worst thing in it is a little salt. They’re very dense, but moist, and really easy to make. I love having these for breakfast.
3. Pesto and Tomato Spaghetti from Trine Marie. This is more of an inspiration kind of thing, actually. I haven’t tried this on spaghetti, but I did do it with tacos, which was most certainly an idea from her post. I used the Philadelphia Garlic Cooking Creme and then served the taco meat on pieces of lettuce, instead of shells. Delicious! But I definitely will be trying the spaghetti (in squash form, of course). It just sounds so good.
