Chicken Bacon Sandwich Ring

I have to tell you…this sandwich ring blew our minds. I expected it to be good, but I didn’t expect it to be as good as it was. I got the recipe here from Rantings of an Amateur Chef, but made a few (healthier) changes.

Zach ate this sandwich until he felt like he would explode. I was impressed. But I can’t blame him–I wanted to do the same. 😛

Chicken Bacon Sandwich Ring

  • 2 8 oz packages crescent roll dough
  • 2 large chicken breasts, boiled and shredded
  • 6-8 slices of bacon, crumbled
  • 1 cup shredded cheese, plus more for sprinkling (I used sharp cheddar)
  • 1 cup fat free sour cream or Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tbsp parsley flakes
  • 1 1/2 tbsps green onions, finely chopped
  • 2 medium roma tomatoes, sliced long-ways into about 14 pieces
  • 1 medium bell pepper (color doesn’t matter–you’re using it as a bowl, not as food)
  • 2 cups lettuce, shredded

Step 01: In a small bowl, mix your sour cream, Dijon mustard, parsley, and green onions. 

Take 1/3 cup of that mixture and set it aside.

Step 02: In a separate, medium-sized bowl, mix together your chicken, bacon, cheese, and 1/3 cup of sour cream mixture. 

Step 03: Preheat your oven to 375°F. Unroll your crescent rolls and begin layering around a prepared baking sheet/pizza stone. Lay the larger ends at the edge of the sheet and let the smaller points hang over the sheet and onto the table.

Step 04: Spoon even amounts of your chicken mixture onto the dough.

Step 05: Now fold your dough over the chicken mixture. Tuck the points underneath the bottom of the dough. And by “tuck under” I mean “smoosh against and hope baking seals it.” Because that’s more along the lines of what I did. Then stick your roma tomato slices in between the segments. I only did half because Zach doesn’t like tomato.

Step 06: Time for baking! Put it in the oven for about 20-25 minutes (mine was perfect after 20). Remove it from the oven. Before the sandwich cools, top it with some shredded cheese. Then while you wait for that to cool, clean, cut, and empty your bell pepper. And then fill it with the remaining sour cream mixture. Top with any leftover green onions you might have.

Put the bell pepper in the center of your baking sheet (I don’t really recommend moving the sandwich to something else) and put lettuce around it.

…I miss this sandwich. Really. I’m so sad that it’s gone. It was delicious.

We thought we would need a knife for this, but we didn’t. The slices come apart very easily (as is the nature of the crescent roll).

    This looks fantastic, Chelsey! When I saw the title I was like, “This is something I would drool over but probably wouldn’t make.” But after I saw the ingredients, it really isn’t that bad. This may be my next party dish to pass. 🙂
